CREAMY FRUIT SALAD (GREEK YOGURT AMBROSIA SALAD)


       CREAMY FRUIT SALAD
  (GREEK YOGURT AMBROSIA SALAD)
                                                          (Yield: 6 cups) 


INGREDIENTS:
·      ½ cup Heavy Cream or Heavy Whipping Cream (Check variations at the bottom)
·      ½ cup Plain Yogurt, strained (Strain ¾ to 1cup of plain yogurt, you will get roughly ½ cup Greek Yogurt/Strained Yogurt) OR use ½ cup store bough Fage Brand or Chobani Brand Greek Yogurt
·      ½ cup White Granulated Sugar or as per taste
·      ½ to ¾ tsp. Vanilla Extract
·      1 small Banana or 1 cup, peeled and cubed
·      ½ cup Fresh Gala Apple or Red Apple, peeled and cubed 
·      ½ cup total of Black/ Purple/Green Grapes, halved
·      ½ cup Pineapple Tid Bits, drained (I used Dole Brand Pineapple Tid Bits Can) or use fresh pineapple and make small pieces
·      2 small Mandarin Oranges, (NOTE: Save 6 Mandarin Orange slices for the garnishing)
·      ½ cup Ripe Mango, peeled and cubed (I used Vadilal Brand frozen Mango slices) or use fresh if it is in season
·      ½ cup Miniature Marshmallows

FOR GARNISHING:
·      6 slices of Mandarin Oranges
·      ¼ to 1/3 cup Miniature Marshmallows
·      1-2 T Sweetened Coconut Flakes, roasted
·      6 Maraschino Cherries

LET’S MAKE:
Spread sweetened coconut flakes on aluminum foil and roast in small toaster oven at 325 degree Fahrenheit temperature until light golden brown. Keep an eye on it, as it turns brown really fast. Keep aside for the garnishing the creamy fruit salad.
Add heavy cream, sugar and vanilla extract in a bowl and whisk with eggbeater/whisker until soft peak forms underneath the whisker. It will take roughly 3-4 minutes to form peak or use handheld eclectic mixture.
Fold in strained yogurt into whipped cream.
Fold in rest of all ingredients.
Refrigerate creamy fruit salad bowl for 2 -3 hours.
Transfer creamy fruit salad in a serving cup.
Garnish with mandarin slice, miniature marshmallows, and roasted sweetened coconut flakes and top with maraschino cherry.
It taste great when served cold.

VARIATIONS:
FOR LOW CALORIC CREAMY FRUIT SALAD:
(1) Use Low Fat Yogurt and strain in muslin cloth to make Low Fat Greek yogurt or use store bough fat free Greek yogurt
(2) Use light cream and make whipped cream from it.  
OR
Skip cream part with double amount of Greek Yogurt for healthier version.
Add Honey instead of sugar.
Dry fruits and toasted almonds, cashews, walnut can be added.
Add fresh fruits, which are in season like mango, sapota/chikoo, kiwi, blueberries, strawberries, muskmelon etc.
For crunchy topping, add frosted corn flakes cereal or crumble your favorite cookies on top.
TO ADD EXTRA CREAMY TASTE:
(3) Add ¼ to 1/3 cup Sour Cream to give rich creamy taste
