GREEN
MOONG DAL AND RICE
PLAIN KHICHDI
(Serves 4)
INGREDIENTS:
· ½ cup Green Moong Dal
· ½ cup Basmati Rice (I use
Lalquilla Basmati Rice for great flavor)
· ½ cup Khichdi Rice (I use
Sona Masoori Rice for softness and unique khichdi flavor.)
· 3 T Ghee (Clarified Butter)
· 1 tsp. Cumin Seeds
· 1 tsp. Salt or as per taste
· ½ tsp. Turmeric Powder
· 1/8 tsp. Asafoetida
· 2 ½ cups Water for firm khichdi
(As shown in the pic, I prefer my khichdi with separate grain)
OR
3 cups Water for soft khichdi OR as needed for desire softness
LET’S
COOK:
Wash
green moong dal and rice separate and soak them in enough water for 30 minutes.
Heat
ghee in pressure cooker. Once ghee is hot add cumin seeds and let them sizzle.
Add
asafoetida and add drained dal, rice, salt and turmeric powder and 2-½ cups
water for firm khichdi and 3 cups for soft khichdi. (NOTE: use drained dal and
rice water as it has great flavor of dal and rice)
Cover
and pressure-cook khichdi for 3 whistles over medium heat. (Medium heat from
start to the finish). Keep cooker closed for 20 minutes or until pressure goes
down.
Open
cooker and serve khichdi with dollop of ghee on top for extra flavor and serve
with Yellow Kadhi, Bhakhri or Bajri Rotla, Achari Ringan Batata Nu Shaak, Raw
White Sweet Onion and Urad Dal Papad on side to complete the entire meal.
