ENCHILADAS

                     ENCHILADAS

INGREDIENTS:
·      Flour Tortillas OR Corn Tortillas
·      Refried Beans as needed (REFRIED BEANS Recipe Link.

·      Tomato-Onion Salsa, 2 to 3 T per enchilada (TOMATO AND ONION SALSA
·      Jalapeno Pepper Slices, 3 slices per enchilada or as per taste
·      Sour Cream, 2 to 3 tsp. per enchilada (SOUR CREAM

·      Cheddar Cheese as needed
·      Mozzarella Cheese as needed


·      USE ALL INGREDIENTS AS NEEDED

LET’S ASSEMBLE ENCHILADAS:
Take Baking Glass pan and grease lightly with butter.
Spread beans on tortillas.
Add tomato-onion salsa, jalapeño slices, sour cream and some enchilada sauce and both cheese.
Roll tortilla gently and put seam side down in pan.
Add enchilada sauce on tortilla rolls.
Add some more enchilada sauce around rolled tortillas too.
Sprinkle cheese on top and heat enchiladas at 350 degrees Fahrenheit until cheese melts and bubbly and tortilla heated through.
Carefully place pan in microwave oven and heat enchiladas for 1 minute.
Serve enchiladas with salsa and nachos on side.
Enjoy.

VARIATION:

For Chicken Enchiladas, use cooked chicken instead of beans.
