CHEESE & BEAN QUESADILLAS

                     CHEESE & BEAN QUESADILLAS

Do you love quesadillas?
Here’s quick and easy lunch/snack item for kids, even the adults love it too. Make quesadillas with whatever combination of ingredients you like.

INGREDIENTS:
·      Flour Tortillas OR Whole Wheat Tortillas
·      Refried Beans OR Black beans OR Corn
·      Tomato, dices
·      White sweet onion, dices
·      Scallion, diced
·      Mexican Cheese Blend OR Any Cheese of your choice

NOTE: Fill about ½ cup total material in one tortilla


SERVE QUESADILLAS WITH:
·      Jalapeno Pepper Slices
·      Avocado Slices
·      Mexican Salsa
·      Mexican Queso Dip

                         
LET’S PREPARE:
Heat heavy bottom non-stick pan on medium heat.
Once pan is hot, reduce heat to medium low.
Meanwhile spread beans on half side of the tortilla, Sprinkle tomatoes, white onion, scallion and cheese on top and cover with remaining half part of tortilla to form half moon shape quesadilla.
Drizzle FEW DROPS of oil (LESS OIL MAKES TORTILLA CRISPIER COMPARE TO MORE OIL) on pan on medium low heat and place folded quesadilla and roast until golden brown and crispy. Flip gently and roast another side until golden brown and crispy. Roasting tortilla on medium low heat for long time makes quesadilla crispy and golden brown.
Cut it in middle to make 2 triangles.
Serve with Mexican salsa and Mexican Queso dip and slice of Avocado and Jalapeno Pepper.
OR
BAKE IN OVEN:
Spray non-stick cooking oil on stuffed, folded tortilla and place them on baking tray and bake in pre-heated oven at 350 degree Fahrenheit until golden brown and crispy on both sides.
