MANGO ROSE LASSI


                                      MANGO ROSE LASSI

                                                              (Serves 1)

Mango Lassi is a refreshing cold drink on a hot summer day.

INGREDIENTS:
·      3/4 cup Frozen Ripe Mango, diced (Chop fresh mango & keep them in freezer for few hours then use) Check tip at the bottom
·      ½ cup Cold Yogurt
·      ½ cup Cold Milk
·      4 tsp. Sugar or as per taste (Amount of the sugar will depend on how sweet your mangos are)
·      1 tsp. Rose Water
·      1 tsp. Rose Syrup (Keep it in freezer for 10-15 minutes)

LET’S PREPARE MANGO LASSI:
Combine all ingredients together except rose syrup in a blender.
Cover and blend until smooth.
Make round ring inside the empty serving glass with rose syrup.
Pour mango lassi.
With the help of straw, push rose syrup downward in glass to give very attractive look.
Serve immediately.

TIP:
Wash and peel mango.Chop mango and spread them on plate and keep it in freezer for few hours to freeze it. Frozen mango serves two purposes. (1) Do not need to add extra ice cube that dilutes the Mango Lassi (2) It gives thick, grainy texture to the Mango Lassi.

VEGGIE FAJITA



                                            VEGGIE FAJITAS
                      (Yield: 5 Fajita Wraps)
INGREDIENTS:
·      5 Flour Tortilla, (Store bought) roast on open flame before assembling
·      5 Romaine Lettuce leaves 
·      2 tsp. Oil
·      2-3 Garlic Cloves, sliced
·      10-15 Slices of Jalapeno Pepper or as per taste
·      2-3 Cups mixture of stir fried Yellow, Green, Red and Orange colored bell peppers and white sweet onion
·      1 ½ T Fajita Seasoning or as per taste
·      Salt as per taste
·      Black Pepper Powder as per taste
·      10 Avocado Slices

OR

LET’S STIR FRY VEGGIES:
Heat heavy bottom non-stick pan on medium high heat.
Add 2 tsp. Oil and let oil to get hot.
Add chopped garlic slices and stir-fry until golden brown.
Remove roasted garlic slices with slotted spoon and to the same pan add few Jalapeno pepper slices and roast them and remove from the pan and keep it aside.
Now In same pan add big chunks of chopped green, red, orange, yellow bell peppers and white sweet onion (All together it should be 2 to 3 cups volume) and roast on high heat for 1-2 minutes.
Toss veggies around and continue cooking veggies for another 1-2 minutes. Do not overcook veggies. Cook on high heat to make it like grilled veggies with charred edges.
Add fajita seasoning, salt and black pepper as per taste and mix well and switch off heat.
Return roasted garlic and jalapeno pepper slices and mix well.
Keep aside.
NOTE: You can use any vegetables of your choice.


LET’S ASSEMBLE FAJITAS:
Place flame roasted tortilla (Maida Roti) in plate.
Place one romaine lettuce leaf on tortilla.
Add hot roasted veggies as needed.
Add 2 avocado slices.
Add tomato onion salsa as needed OR add mango salsa as needed
Add garlic yogurt dip (Add 1 tablespoon red bell pepper and garlic chutney in 1/3 to ½ cup whisked plain yogurt and add salt as per taste) or any dip of your choice as needed.
Wrap tortilla and serve.

Stuff Black Beans or Pinto Beans and make Mexican Bean Wrap.
Stuff Paneer Tikkas and make paneer fajitas/Frankie.
Stuff French Fries and make potato fajitas.
Stuff Roasted Potato Wedges made with Indian spices and make fajitas.
Stuff Falafel Fritters/Gota and make falafel style fajitas.
Stuff Grilled Chicken and make chicken fajitas.

MANGO SALSA



                    MANGO SALSA

INGREDIENTS:
·      1 Ripe Mango, peeled, deseeded and dices
·      2 Medium Size Tomatoes, deseeded and dices
·      White Sweet Onion, half in volume compare to tomatoes, dices
·      2-3 Sprigs of Coriander Leaves, chopped
·      Salt as per taste
·      Chat Masala as per taste
·      Black pepper as per taste
·      1-2 T Lemon Juice, to balance sweetness of mango (Note: Amount of lemon juice depends on sweetness of the mango) 
·      1 Green Chili or as per taste, chopped
·      1 Medium Size Garlic Clove, minced


LETS MIX:
Choose a perfectly ripe mango (not too ripe or raw)
In a mixing bowl combine all ingredients except salt and chat masala else it will start releasing water from the vegetables.
Toss to combine well.
Keep chilled until ready to serve.
Add salt and chat masala when you are ready to serve.
Mix well and serve Mango Salsa with Plain Tortilla Chips.
You can serve as a topping for Tacos, Veggie Fajitas and for many other Mexican dishes.

VARIATION: 
Colorful bell peppers, cucumber, corn kernels (fresh/frozen or freshly roasted corn kernels) can also be added to the salsa.


TOMATO-ONION CHUNKY SALSA




             TOMATO-ONION CHUNKY SALSA
                      (Yield: About 1 cup)

INGREDIENTS:
·      ½ cup Tomato, chopped
·      1/3 cup Red Sweet Onion OR White Sweet Onion, chopped
·      2-3 sprigs of Coriander Leaves, chopped
·      1 Green Chili or as per taste, chopped
·      ½ Jalapeno Pepper or as per taste, chopped
·      1 small size Garlic Clove, minced
·      Salt as per taste
·      ¼ tsp. Sugar or as per taste
·      1/8 tsp. Black Pepper Powder
·      1 tsp. Lemon Juice

LET’S MIX:
In a bowl combine all ingredients together except the salt and sugar else veggie will start releasing water.
Keep chilled until ready to serve.
Add salt and sugar few minutes before serving.
Mix well and serve with plain corn tortilla chips, it goes well with all Mexican dishes like fajitas, tostadas, burritos, quesadillas too.
