MANGO SALSA
INGREDIENTS:
· 1 Ripe Mango, peeled,
deseeded and dices
· 2 Medium Size Tomatoes,
deseeded and dices
· White Sweet Onion, half in
volume compare to tomatoes, dices
· 2-3 Sprigs of Coriander
Leaves, chopped
· Salt as per taste
· Chat Masala as per taste
· Black pepper as per taste
· 1-2 T Lemon Juice, to
balance sweetness of mango (Note: Amount of lemon juice depends on sweetness of
the mango)
· 1 Green Chili or as per taste,
chopped
· 1 Medium Size Garlic Clove, minced
LETS
MIX:
Choose
a perfectly ripe mango (not too ripe or raw)
In
a mixing bowl combine all ingredients except salt and chat masala else it will
start releasing water from the vegetables.
Toss
to combine well.
Keep
chilled until ready to serve.
Add
salt and chat masala when you are ready to serve.
Mix
well and serve Mango Salsa with Plain Tortilla Chips.
You
can serve as a topping for Tacos, Veggie Fajitas and for many other Mexican
dishes.

VARIATION:
Colorful
bell peppers, cucumber, corn kernels (fresh/frozen or freshly roasted corn
kernels) can also be added to the salsa.
