INDIAN STYLE SPICY RED POTATO WEDGES



   INDIAN STYLE SPICY RED POTATO
                         WEDGES
                                                           (Serves 2)
Are you craving to have French fries? Instead of deep-fried French-fries, let’s make this Indian style spicy red potato wedges. It is a healthy alternative for French Fries.

INGREDIENTS:
·      3 Medium size Red Skin Potatoes, DO NOT PEEL
·      1 T Oil
·      2-3 Garlic Cloves, smashed
·      1/8 tsp. Red Chili Flakes
·      1/8 tsp. Kashmiri Red Chili Powder
·      1/8 tsp. Garlic Powder
·      1/8 tsp. Black Pepper Powder
·      Pinch Italian Herbs from McCormick Italian Herb Grinder
·      1/8 tsp. Mango Powder
·      ¼ tsp. Chat Masala
·      Salt as per taste
·      2-3 Sprigs of Coriander Leaves, chopped


LET’S COOK:
Wash and dry potatoes and cut them in thin–long wedges.
Heat oil in a heavy bottom non-stick pan on medium heat.
Once oil is hot add smashed garlic and potato wedges and cook for about 3 to 4 minutes on medium low heat or until golden brown in color.
Add red chili flakes and carefully flip potato wedges and continue cooking until golden brown in color.
When potatoes are almost cooked then sprinkle all dry spices.
Switch off heat.
Garnish with chopped coriander leaves.
Serve with yogurt raita or with ketchup.

ALTERNATIVE COOKING METHOD:
BAKED POTATO WEDGES:
In a bowl combine all seasonings, oil and potato wedges and toss until evenly coated.
Spread potato wedges in single layer on baking tray and bake in a preheated oven at 375 degree Fahrenheit for 15-20 minute on each side (Time may vary).
